Creamy Purslane Yogurt Salad

Healthy, full of fiber, vitamin and mineral; creamy purslane yogurt salad

- 400 gr.14.5 oz. Yogurt
- 100 gr.3.5 oz. Purslane (Just use leaves)
- 1 qty. Salt Teaspoon
- 1 qty. Garlic Clove Minced
- 1 qty. Dried Mint Teaspoon
- 1 qty. Red Pepper Flakes Teaspoon


1. In a medium mixing bowl, mix yogurt, salt and minced garlic. Stir until combined.
2. Add leaves of purslane and stir again. Pour it into your serving plate and decorate with dried mint and red pepper flakes and serve.

Footnote: Purslane is a miracle vegetable, that has little calorie and fats on the contrary, rich in omega 3 fatty- acids, vitamin A, Vitamin C and some B-complex vitamin. It contains also high amounts of minerals like iron, magnesium and copper. This recipe is a good start to add this miracle vegetable to your daily diet.
