Footnote: Purslane is a miracle vegetable, that has little calorie and fats on the contrary, rich in omega 3 fatty- acids, vitamin A, Vitamin C and some B-complex vitamin. It contains also high amounts of minerals like iron, magnesium and copper. This recipe is a good start to add this miracle vegetable to your daily diet.
Tips: I prepare this salad with homemade yogurt, you can use plain yogurt. Store in refrigerator if some salad remains. If you want to try another recipe of purslane, you can check my chickpea purslane salad.
