Pumpkin cake with delicious cream cheese frosting

Units:

Ingredients:

- 2 qty. Egg
- 150 gr.5.5 oz. Sugar
- 100 gr.3.5 oz. Olive Oil
- 200 ml.6.5 fl. oz. Pumpkin Puree
- 1 qty. Vanilla Extract Teaspoon
- 165 gr.6 oz. Flour
- 0.5 qty. Ground Cloves Teaspoon
- 0.5 qty. Ground Nutmeg Teaspoon
- 1 qty. Cinnamon Ground Teaspoon
- 0.5 qty. Ginger Ground Teaspoon
- 2 qty. Baking Powder Teaspoon
- 1 qty. Vanilla Extract Teaspoon

Cream Cheese Frosting:
- 200 ml.6.5 fl. oz. Heavy Cream
- 200 gr.7 oz. Cream Cheese
- 5 qty. Powdered Sugar Tablespoon


Directions:

1. Preheat oven to 180 C355 F and prepare a baking sheet covered with parchment paper.
2. In a stand mixer, beat the eggs and sugar about 4-5 minutes on high speed.
3. Add pumpkin puree, vanilla extract and olive oil and mix again.
4. In another bowl, mix dry ingredients, flour, cinnamon, ground nutmeg, ground clove and ginger and baking powder.
5. Add dry ingredients to egg mixture and stir with rubber spatula gently until combined.
6. Spread batter in prepared pan.
7. Bake about 12-15 minutes in preheated oven until toothpick comes out clean.
8. Meantime, prepare cream cheese frosting. In a stand mixer, beat cream cheese, heavy cream, powdered sugar and vanilla extract to thicken on high speed.
9. Let the cake cool down to room temperature and cut 3 long rectangle pieces.
10. Take first layer and spread cream cheese frosting, and top with second layer. Spread again frosting and top with last layer. Let it chill about 30 minutes at refrigerator or 20 minutes at freezer and slice and enjoy.



Footnote: If you want, you can cover the sides of the cake with cream cheese frosting or just serve like me by sprinkling some ground cinnamon and powdered sugar. I cut the sides of the cake to get sharp ends and prepared 4 portions parfait with remaining cake pieces and frosting. You can use one desert spoon pumpkin spice instead of all spices I gave.
Tips: Use all ingredients at room temperature. My cake baked in 12 minutes. Check after ten minutes with a toothpick whether it is baked or not. You can ask anything about the recipes in FAQ part.
