1. Wash, peel and grate carrots. 2. Heat oil in a small pan, add carrots and salt, saute until carrots cook. Remove from the heat and set aside. 3. In a mixing bowl, mix yogurt, mayonnaise and minced garlic. Add carrots and stir until well combined. 4. Serve cold. Enjoy.
Footnote: If you don't like garlic, you can remove it from the recipe. I use plain yogurt. You can increase the amount of yogurt and decrease the mayonnaise up to your taste.
Tips: Cook carrots until softened. Carrots should be at room temperature before adding over the yogurt mixture.
