- 1 qty. Tomato - 0.5 qty. Cucumber - 1 qty. Red Pepper Red Bell Pepper - 15 gr.0.5 oz. Lettuce 3-4 Leaves - 0.5 qty. Lemon - 2 qty. Olive Oil Tablespoon - 1 qty. Salt Teaspoon - 20 gr.0.5 oz. Corn 2-3 Tablespoons - 30 gr.1 oz. Green Lentil Sprouts 4-5 Tablespoons
1. Chop lettuce leaves, cucumber, bell pepper and tomatoes. 2. In a medium bowl, mix lentil sprouts, corn, chopped cucumber, bell pepper, tomatoes and lettuce leaves. 3. In a small mixing bowl, mix olive oil, juice of half lemon and salt, stir and pour over the salad. 4. Mix well and serve.
Footnote: You can add fresh parsley, basil, mint any other herbs you want. Lentil sprouts gives extra natural and delicious taste to this recipe. You can find the recipe of lentil sprouts in my blog.
Tips: I use lemon juice, olive oil and salt as salad dressing, you can use balsamic vinegar instead of lemon juice also. If you don't want to eat raw lentil sprouts, you can steam them 4-5 minutes before using. In my opinion give it a try without cooking. It is so delicious, nutritious and healthy. Enjoy!
